looking for a recipe for a good cheese sauce?

i want to use angel hair or med. spag. noodles. i am looking for a good cheese sauce that is creamy. thanks! i am not going to include any meat!

Creamy Cheese Sauce

Ingredients:
2 Tablespoons butter
3 Tablespoons flour
2 cups milk
2 cups grated Jack cheese
1/2 teaspoon salt
1/4 teaspoon dry mustard
1/4 teaspoon cayenne pepper

Melt butter; stir in flour and cook while stirring for several minutes. Add milk, stirring constantly until sauce begins to thicken and bubble. Stir in cheese and seasonings, and cook until cheese is melted.

* 4 oz grated cheddar

Creamy Beer-Cheese Sauce

Ingredients:
3 tablespoons butter
3 tablespoons flour
1/2 teaspoon dry mustard
1/2 teaspoon salt
1 dash pepper
1/2 teaspoon Worcestershire sauce
1/3 cup instant nonfat dry milk
1 can (12 ounce size) beer, warm
1 cup shredded Cheddar cheese
2 tablespoons powdered nondairy creamer

Directions:
Melt butter; stir in flour and seasonings. Mix dry milk with 1/3 cup beer. Gradually add remaining beer to flour mixture.
Cook, stirring constantly, until thickened and smooth. Add cheese and creamer; stir until melted. Remove from heat; add milk mixture. serves 6

  2. I buy cheese sauces in jars found in the chip section at the grocery store. Be sure to read the jars because some are hot, hot, hot. I like the mild best.

  3. melt 2 tbsp of butter in a pan, and then add 1 and a half tablespoons of flour. whisk for 1-2 mins until flour is cooked out. add a little splash of cold milk and whisk until thick. add another half – 3/4 of a cup of cold milk and season. let it simmer for 5 mins. add your cheeses (tasty or cheddar works well) and add to hot pasta. this is great for mac and cheese.

    Olive Garden Alfredo Sauce
    1 pint of Heavy Cream
    1 stick of butter
    2 Tbsp. Cream Cheese
    1/2 – 3/4 C. Parmesan cheese
    1 tsp. Garlic powder

    Methods/steps
    In a saucepan combine butter, heavy cream, and cream cheese. Simmer this until all is melted, and mixed well. Add the Parmesan cheese and Garlic powder. Simmer this for 15 – 20 minutes on low. You may wish to season with a little salt and pepper. I have done this with half and half, but we prefer the heavy cream. But I wouldn’t try it with plain milk.

    4 drops yellow food coloring

    CHEESE SAUCE

    Makes 250ml

    INGREDIENTS

    35g of mature Cheddar cheese
    1 tablespoon of butter
    1 tablespoon of flour
    250ml of milk
    Ground pepper to taste

    METHOD

    Grate the cheese.

    Put the butter into a saucepan on a medium heat. Melt the butter. Add the flour and cook for a minute, stirring all the time.

    Take off the heat. Add the milk a bit at a time. Stir each time to make sure it is smooth.

    When all the milk has been added, put the pan back on the heat. Bring to the boil. Keep stirring. Turn down the heat until it is just boiling (simmering). Cook for 2 minutes, stirring all the time.

    Take off the heat. Add the cheese to the sauce and mix. Continue to stir until the cheese has melted into the sauce. Season with the pepper.

    ADDITIONS AND ALTERATIONS

    If the sauce is too thin, add a little bit more flour. If the sauce is too thick, add a little bit more milk. Don’t forget that adding more cheese to improve the flavour will also thicken the sauce.

    Use other full flavoured cheeses. Use ready grated cheese. Add 1 teaspoon of whole grain mustard.

    TIPS

    The trick is to keep stirring.
